Southwestern Style Chicken Quinoa Salad

You've got to try this recipe. It was delicious. You can either eat it as a "quinoa salad" or wrap it up in a tortilla and use it as burrito filling like we did. Either way its delicious.

What you will need:
 (serves 6-8, great if you want leftovers for the next day)

2 cups quinoa
1 chicken flavor bouillon
1/4 cup extra virgin olive oil
2 limes, juiced
2 tbsps crushed garlic
1/2 onion
1 teaspoon ground cumin
1/4 teaspoon cayenne
1 (15 ounce) can black beans
1 (15 ounce) can of corn
1/2 cup Trader Joes' Cilantro salad dressing 

What to do:

1.) Cook 3 Chicken breasts however you would like.
 I prefer cooking mine over the stove top with lots of caramelized onions, garlic, white wine and chicken broth but the flavor of the chicken does not really make or break this dish so you can bake it, grill it, boil it! It's up to you really.
2.) Once your chicken is cooked thoroughly, dice the chicken breasts and top with lime juice.
3.) Follow the directions on the package for the quinoa. (2 parts water, 1 part quinoa) 
Add 1 chicken bouillon to the water as well as salt and pepper to taste.
4.) Remove Quinoa from stovetop and allow to cool.
5.) Heat corn and black beans.
6.) Once warm, strain them to remove juices

You're almost done! Here's the easy part.

7.) Mix all ingredients in a large bowl! 
Mix in 1 teaspoon of ground cumin and 1/4 teaspoon of cayenee into the mixture.
Last but not least pour in 1/2 cup of Trader Joe's Cilantro Dressing on top and your done!!

These were all the ingredients I had to work with.. 
You could also add cilantro and tomatoes to the mix!












If you are anything like me, you get impatient while you cook and eat straight out of the pan. I poured some seasoned quinoa into one of my avocado bowls and topped it with lime.. seriously delicious! I discovered a new snack in the process of making dinner!
